Make-Your-Own Soup Serves 10-12
2 qts water
8 tsp. chicken bullion
2-3 cans crushed tomatoes, (14-15 oz. cans)
4 oz. can green chilies
1 jalapeño, chopped
1 tsp chili powder
1 tsp cumin
½ tsp coriander
½ tsp oregano
1/8 cayenne pepper
½ tsp black pepper
1 tsp salt
1-28 oz. can hominy, do not drain
1 cup onions
Saute onions until brown. Add remaining ingredients. Cover and simmer 1 hour. Put broth in a crock pot to keep warm.
Put items from the following list in separate bowls. Guests take the condiments they want and then ladle the broth on top (like a salad bar.)
Carrots, parboiled
Green peppers, chopped
Green onions, chopped
Corn
Noodles and/or rice (Cooked)
Chicken, cooked and diced
Olives, sliced
Beans- black, kidney, or pinto, drained & rinsed
Cabbage, shredded
Shredded Cheese (Mex Mix or Parmesan)
Sour cream
